Taste the Rainbow (Healthy Edition)

It took me way longer to realize that "taste the rainbow" is a reference to Skittles, not Lucky Charms, than I care to admit. I  am not a smart man.

But lunch was delicious, so I've got that going for me, at least.

Taste the Rainbow (Healthy Edition)

Ingredients
1 large sweet potato
1 lb frozen Brussels sprouts

1 zucchini
1 yellow/summer squash
1 1/2 tsp olive oil
1 1/2 tsp garlic powder
1/4 tsp black pepper

2 tbsp butter/coconut oil
1 1/2 tsp cajun seasoning (see below)

2/3 cup unsweetened applesauce
4 oz fresh blueberries (1/4 of the pint carton, for me)
5 or so fresh strawberries


Instructions

- Preheat oven to 450*F. I use my toaster oven and it works beautifully.

- Peel and wash the sweet potato. Cut it up into pieces 1/2" thick and no more than 1" in any  other direction. They do not need to be even; you will be mashing them later.
- Dump the sweet potatoes and frozen Brussels sprouts into your steamer. Leave them to steam.

- Cut the zucchini and squash each into thirds cross-wise (so they should be 1/3 the length of the original), then slice each third into quarters length-wise (so you end up with the middle being a triangle and the peel part being a curved surface). This should yield 12 pieces of each.
- Toss the veggies (technically I think they're a fruit?) in a medium mixing bowl with 1 1/2 tsp olive oil, 1 1/2 tsp garlic powder, and 1/4 tsp black pepper.
- Place them skin-side down on a broiler or baking rack.
- Bake 20 minutes.

- DO NOT WASH THE MIXING BOWL.

- While that's baking, core and cut up your strawberries.
- Mix them with the applesauce and blueberries and divide between two cups.

- When the 20 minute timer goes off, shut off the oven and steamer.
- Dump the sweet potatoes into the mixing bowl with 1 1/2 tsp cajun seasoning (recipe follows) and 2 tbsp butter or coconut oil. Add a dash of salt if you're using coconut oil.
- Mash the daylights out of that mix until it's all blended together.

- Serve the potatoes, zucchini/squash, and Brussels sprouts all on one plate 'cause that's pretty 'n stuff.
- Serve the dish of applesauce/fruit mix next to it 'cause that completes the rainbow.

Ayup, that'll just about do it. Give it a go, it tastes nice.

As promised, homemade Cajun seasoning, which is:

- 1/2 tsp garlic powder
- 3/4 tsp paprika
- 1/4 tsp black pepper
- 1/4 tsp onion salt
- 1/4 tsp cayenne pepper
- 1/4 tsp oregano
- 1/4 tsp dry thyme.

You will not use all of this up in one go of this recipe. Guess you'll just have to make it multiple times, no?
