Mudhorn Eggs

I first discovered this recipe on Foodwishes.com's YouTube channel , which slated them as Turkish eggs.  However, I'm pretty sure that recipe's an adaptation of authentic Turkish eggs, and since my recipe is an adaptation of that recipe ... yeah.  Not gonna claim it's Turkish until someone tells me I can.  Like someone from Turkey, not just any random yahoo. That said, this is arguably my favorite way to eat eggs, so good that I'm not even ashamed to admit that I licked my plate clean and scurried upstairs to work out after I ate it, just so I could burn off what I'd just eaten and eat it again.  Gonna be making this a LOT on nights I get home and need dinner NOW, which is pretty cool, because it's shockingly good for you -- low in butter (you need VERY little to get the flavor), has eggs and wheat toast in it, and a generous serving of yogurt.  Everything the body needs! Loco OmuMoco Rice (LocoMoco + Omelette Rice)

Omurice (omelette rice) is something of a staple comfort food in Japan, and Loco Moco is something of a comfort food in Hawaii, and since both traditionally contain meat, I've not gotten to enjoy either since I became a vegetarian in 2014.  Five years I've gone without my favorite comfort foods, and that is just not okay. Well, until now.  I've fixed it now. This meal's kind of a pain in the ass to read through, instruction-wise, but it's not all that hard to make, really.  You invest about an hour in it the first time you make it, but then you get leftovers sufficient for like 4 more meals-for-two, and making it after you've gone through the trouble the first time is easier than falling in love with Luke Skywalker again , ask me how I know any of these things. I'm Dreaming of a White Bean Soup

A thousand years ago when I first decided to give a plant-based diet a try, I decided to be That Vegetarian and turn my nose up at things like tinned beans and frozen vegetables.  This was a mistake.  You can find that mistake  here , but you shouldn't, really.  Follow this recipe instead. (Inspired by  this recipe , changed to make it easier for me to be incredibly lazy.  True story.) OH.  And it's super good for you!  I don't usually think of lazy-molly food as being on the healthy end of the scale, but this one actually is!  Will wonders never cease.  Give it a go! Several days before our 12-year wedding anniversary, my partner texted me: "I want to make food." I looked at that and my first thought was, "Who doesn't?" because cooking is one of my all-time favorite past-times.  But then my rational brain caught up and reminded me that my dear partner will cook only if he's about to drop dead from starvation because cooking just isn't his thing, so I lifted an eyebrow at my phone and responded with:  "What food do you want to make?" Jabba is not invited. Neither are the stormtroopers. They were mean to Beru and Owen, and that's not permitted. Taco Tuesday on Tatooine (Dagobah edition) Ingredients Taco Seasoning 1/2 tsp onion salt 1 tsp chili powder Dash cayenne pepper (to taste) 1/4 tsp dried oregano 1/2 tsp garlic powder 1/2 tsp dried cumin Taco Filling 1 1/2 cups frozen spinach 4 eggs 1 tbsp olive oil 1ish cup shredded cheese And some sort of taco filling delivery mechanism - tortillas, hard shells, whatever you like Instructions - Combine all ingredients for the taco seasoning. I'm going to just hazard the guess that Yoda's not a bad cook and Luke's just not used to food made from plants. Not tropical plants, anyway. Think about it: The boy grew up on Tatooine, where the only plants I'm assuming he had access to were of the succulent variety (think cacti), and then he hung out with Han for a while on the Falcon  where they probably ate rations (think Clif bars, but somehow even less palatable and minus the type of physical exertion that makes them taste like mana from heaven), and then he was on Hoth where I'm trying not to think too hard about what they ate (tauntaun steaks anyone?). So of course a good veggie-heavy soup would smell weird to him. I love leafy greens, and even I  think spinach-based foods smell weird sometimes. Not so long ago, in a galaxy just parallel to the one far, far away, it turns out that we're  the ones who eat the sarlacc, not the other way around ... I've recently discovered the absolute treasure trove that is Star Wars . Yes, I know I'm about 38 years late to this party (which is, in-and-of itself impressive, since I'm only 32), but in my defense , my introduction to Star Wars  was that godawful trilogy from the early 2000s that we don't talk about, okay . Being vegetarian at Thanksgiving is trickier than I'd thought it would be. My first Thanksgiving not eating meat, I was hungry after the big meal, which led to me pouting for a solid year. My second Thanksgiving not eating meat (this Thanksgiving), I ate so much I was actually concerned that I'd throw up after the meal because Aunt Linda recognized my plight and decided to be her usual awesome self about addressing it. One of the dishes she made for me was roasted portobello mushrooms. Now, I had never eaten a portobello mushroom before and was wary, but these things were AMAZING. They had an almost meaty flavor to them, which led me to think about turning mushrooms into a meat substitute, which led me to thinking about making a steak 'n cheese out of mushrooms, which led to quite a lot of steak 'n cheese happening in my house after we got home from visiting family. I've re-discovered omelettes recently, and I'm not really sure why I'm liking them so well these days. Maybe because there's no meat in them now, unlike I did back when I first learnt to make omelettes, and meat tends to smell like a wet dog, to me? Dunno. Regardless, we're eating omelettes at least three times a week, these days, and I think I might be in love. This recipe came about thanks to my parents and their trip to Italy ... oh heavens, it's been two years now, where did time go? Zucchini Chili Ramen

Everyone I know is sick of hearing about my amazing veggie spiralizer . I'm aware of this. But I can't stop gushing over how much I love it because COME ON GUYS IT'S A THING THAT MAKES NOODLES OUT OF VEGETABLES. I can eat all those fabulous pasta dishes without getting all bloated and sick! And without boiling noodles forever in the summertime! It's F.A.B.U.L.O.U.S. *cough* Anyway. So there's this place called Wagamama, and it's strange how you can go there sometimes and get a meal that's so good it makes you want to cry, then other times you go there and your meal is mediocre, at best. Complete crap-shoot. We've had more good meals there than bad, but enough bad meals there that we don't really feel  like going anymore because it's not inexpensive enough for us to gamble on getting a good meal. Sweet Chili Soba Noodles with Eggs & Veggies

I honestly don't remember why we bought the enormous bottle of sweet Thai chili sauce that's been in our refrigerator for the past ... probably three years. I suspect it was for a Thai dish (duh) but I make so many of those, that doesn't really narrow it down, like at all. Anyhow, because the bottle's been in the 'fridge for ages, and it had seriously like 2 oz used out of a full liter, we figured we should use it up. Or use it at all, you know. So I went online and looked for recipes that used sweet Thai chili sauce, and happened upon this recipe , which was pretty damn excellent, especially after an hour of DDR, 25 miles of bike-riding, a trip to the hardware store (I got to buy a power saw, I am SO EXCITED), and some pathetic attempts to do press-ups and chin-ups.
