Laugh It Up Fuzzball Sweet Potato Chili

Fun facts about Chewbacca: 1) He's 200 years old when we first meet him in A New Hope; 2) He'll live to be 400 years old, so he knew he was going to out-live Han Solo when he adopted the guy; 3) I'm pretty sure he'd adopt Leia and keep her as his cub if he had half a chance; 4) He's awesome and his actor, Peter Mayhew, is one of the most understated and loveable celebrities on the planet.

This dish has literally nothing to do with him, otherwise, save that ... um. Yeah, nope, nothing to do with him.

Doesn't matter. It's a great recipe, and you're a laser-brain if you don't give it a go. #nailedit

Laugh It Up Fuzzball Sweet Potato Chili
 
Ingredients
1 tbsp olive oil
2 medium yellow onions, diced
2 tbsp chili powder
2 tsp cumin
1 tsp black pepper (I never measure, honestly)
4-10 shakes cayenne pepper (I don't measure this, either)

2 cups frozen diced green peppers (use fresh if you have that much free time on your hands)
4 1/2 cups water
2 cups prepared salsa (shut up, this is an easy meal okay)
1 tbsp lime or lemon juice, whatever you have in the house

2 large sweet potatoes, scrubbed but unpeeled, cut into chunks
30 oz tinned black beans, drained (and rinsed, if you can be bothered)
30 oz tinned kidney beans drained (probably oughta rinse these)

Cheese for topping
Sour cream or plain yogurt for topping if you're awesome
Cornbread or tortilla chips or Tusken Raider fries if you're REALLY awesome




Instructions
- In a large soup-pot or dutch oven, heat the oil on medium-high heat.
- Dice the onion. Doesn't need to be all that fine-diced, don't work too hard.
- Add the onion to the pot and stir it around, then leave it to cook and caramelize some.
- Once it's caramelized to your liking, add in the spices and stir them around to coat the onion.

- Add the water, salsa, and green peppers, and bring it to a boil.

- While that's coming to a boil, scrub your sweet potatoes and cut them into 1"-1 1/2" thick coins.
- Cut the coins into 3/4"-1" cubes. Add them to the pot.
- Open, drain, and rinse your beans. Add them to the pot.

- Stir everything around until it's cooperating nicely.

- Boil 30-45 minutes, unlidded, until the sweet potatoes are soft enough for your liking.




If you're feeling creative, you can make wraps out of this and Dagobah Swamp Scrambled Eggs. Lay out a flax wrap tortilla, put a line of cheese down the middle, top that with the eggs, then top that with the chili. Makes 4 big wraps, using the linked scrambled egg recipe, and it's MESSY, but it's darned good, and it has lots of good protein in it, which is good when you've got parsecs yet to travel. #iunderstoodthatreference
