Rule the Galaxy (as cookies and milk)

So there's this awesome fan theory out there that Darth Vader/Anakin Skywalker isn't actually Luke's father, that Obi-wan Kenobi was actually his father, and it makes watching the prequels ... well, still a really bad idea, but it makes the orig-trig all kinds of fascinating to rewatch. I mean, they're already fun to rewatch mostly because Mark Hamill's in them but this adds an undercurrent of flavor. A hint of darkness, you might say.

Much like the espresso in these cookies.

By now, you've probably encountered cookies made using boxed cake mix, which is just the loveliest of easy cookie recipes out there, and this one is very similar to it, save that it uses espresso powder and butter and kind of accidentally gives you chewy Oreos you can make at home whenever you want. And that's just plain exciting.

So join me in making these cookies, and together we will rule the galaxy as ... fat and sugar and oh god someone save me from these cookies they're addictive and I can't stop eating them.

Rule the Galaxy (as cookies and milk)

Ingredients
1 box dark chocolate fudge cake mix (or devil's food if you can't find dark chocolate)
2 tbsp espresso powder
1/3 cup butter, melted
2 eggs
Optional: Sugar to roll the cookies in



Instructions
- Preheat oven to 325*F.
- In a large mixing bowl, combine cake mix and espresso powder.
- Melt the butter and mix it in.
- Mix in both eggs, working the mixture until you run out of swear words it's all fully combined.

- Form the dough into teaspoon balls (I use my cookie scooper for this and it's FAB) and arrange them, slightly flattened, on a silpat or ungreased cookie sheet. To keep them from being wicked sticky, you can toss them in white sugar, but that's not required.

- Bake at 325 for 15-16 minutes. They will be really puffed up and probably not look like they're baked through, but they are. Over-baking these is pretty easy, and it's not the end of the world, it just makes them crunchy instead of chewy.

- Allow to cool at least 10 minutes before taking them off the baking sheet. They'll break apart if you pull them up too early.



They go great with a glass of bantha milk or a cup of milk tea!
