Quezza Pizzadilla
I have a wicked weakness for pizza, which is stupid because pizza is Not Good for Me and expensive. Its only redeeming quality these days is that it's a 7,000-step walk from my house to the pizza shop and back, and that's kind of negated by the fact that I get home and eat the entire pizza in one go, then fall asleep in a food coma.
My relationship with pizza is complex and troubled, let me tell you.
Today, we got home from our walk (same 7k-step walk, mind you, only we bought doughnuts instead of pizza, my body weeps) and I got all feisty watching my partner wash the pan he uses to make me quesadillas. What if, I thought, I (and by "I" I mean "he") made a quesadilla with mozzarella cheese and some Italian spices, then dipped it in pizza sauce? Would I get something vaguely pizza-ish?
The answer is a resounding YES. It's not got the consistency of pizza, but it has the flavor, which is what I find I crave. And it's small, which means I can gorge myself on it without the whole bloat-belly coma-nap that follows ordering a pizza.
(Full disclosure, my partner thinks it's a huge disappointment. That's fine -- I'm used to him being wrong, and it means More For Me, which is always a good thing).

Ingredients
1/2 cup shredded mozzarella cheese
1/4 tsp garlic powder
1/4 tsp dry basil
1/4 tsp dry oregano
1/2 tsp parmesan cheese
2 6" flour tortillas/fajita wrappers
4 tbsp tomato sauce of your choosing. Marinara would make sense; I used spaghetti sauce because that's what I had in the house

Quezza Pizzadilla
Ingredients
1/2 cup shredded mozzarella cheese
1/4 tsp garlic powder
1/4 tsp dry basil

Instructions
- In a small bowl, combine mozzarella and parmesan cheeses, garlic powder, basil, and oregano.
- Heat a 12" skillet over medium heat.
- Set one tortilla in the pan and evenly sprinkle the cheese/spice mixture over it.
- Top with the second tortilla.
- Let cook about 2 minutes, or until the bottom tortilla is beginning to brown or puff.
- Flip and cook the other side for about 1 minute, or until it's browned.
- Serve onto a small plate and let stand while you heat the red sauce (20 seconds in the microwave should do it).
- Cut into 6 triangles and eat immediately.
(Disclaimer: I don't make this dish, my partner does. He's not one to think too hard about what he's doing, so the cooking instructions may suck. I'll revise them the next time he makes this for me and I'm around to actually time things off.)
