Red Leader Roasted Okra & Parsnips
Wedge Antilles is a fascinating character. He doesn't have any special abilities or status, no tragic family backstory or hero's journey. He's friends with everybody's favorite space farmer Jedi, survives the Death Star not once but twice, and as of the writing of this recipe, he's survived all the Star Wars movies and hasn't been tortured by Darth Vader even once.
I think that's pretty cool.
Almost as cool as this amazing recipe, which can be a main character or a side personality, depending on what role you need it to play, and it tastes like it's a lot of work, but it's so easy it's almost embarrassing. I've made it as a side dish to go with Badass Biker Chick(pea) Burgers, and I've served them as the main course with a hardboiled egg on the side. They're healthy, delicious, low-carb, gluten-free, soyfree, vegan, all the words -- but they're super tasty, go make 'em.
Now.
Ingredients
1 lb frozen cut okra
2 tsp olive oil
1/2 tsp coarse salt
Gratuitous black pepper
1 lb parsnips, scrubbed and cut into 1" pieces
1 Tbsp olive oil
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp paprika
Generous sprinkle coarse salt
1/2 tsp cinnamon
1 tsp dry cliantro
2 tsp lemon juice

Red Leader Roasted Okra & Parsnips
Ingredients
1 lb frozen cut okra
2 tsp olive oil
1/2 tsp coarse salt

1 lb parsnips, scrubbed and cut into 1" pieces
1 Tbsp olive oil
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp paprika
Generous sprinkle coarse salt
1/2 tsp cinnamon
1 tsp dry cliantro
2 tsp lemon juice
Instructions
- Preheat oven to 410*F.
- Defrost the okra in a medium mixing bowl for 1 minute.
- Add the olive oil, coarse salt, and black pepper.
- Toss the okra in the oil and spices until it's coated.
- Dump it onto a cast iron skillet, jellyroll pan, or casserole pan so that it's a single layer, but the pieces can totally be bumped up against each other, no problem there.
- Do not wash the bowl.
- Scrub and chop the parsnips and toss them into the bowl.
- Add the olive oil, cumin, coriander, paprika, salt, cinnamon, cilantro, and lemon juice.
- Toss it all around until the parsnip pieces are all coated.
- Add them to whatever you put the okra on and spread them out so that they're in a single layer, but again, no worries if they're touching.
- Bake 45-55 minutes, or until the okra's started to brown.
- Serve mixed together.
