Taste the Rainbow (Healthy Edition)

It took me way longer to realize that "taste the rainbow" is a reference to Skittles, not Lucky Charms, than I care to admit. I  am not a smart man. But lunch was delicious, so I've got that going for me, at least. Taste the Rainbow (Healthy Edition) Ingredients 1 large sweet potato 1 lb frozen Brussels sprouts 1 zucchini 1 yellow/summer squash 1 1/2 tsp olive oil 1 1/2 tsp garlic powder 1/4 tsp black pepper 2 tbsp butter/coconut oil 1 1/2 tsp cajun seasoning (see below) 2/3 cup unsweetened applesauce 4 oz fresh blueberries (1/4 of the pint carton, for me) 5 or so fresh strawberries Instructions - Preheat oven to 450*F. I use my toaster oven and it works beautifully. - Peel and wash the sweet potato. Cut it up into pieces 1/2" thick and no more than 1" in any  other direction. They do not need to be even; you will be mashing them later. - Dump the sweet potatoes and frozen Brussels sprouts into your steam...

Rice Pudding is NOT a Breakfast Food

I ate it for breakfast anyway. And then I was sick. It's just so delicious , is all, and David made it for me before our breakfast smoothies so I was hungry and then I ate like two dishes of pudding and  my smoothie and now I'm uploading the recipe to my blog whilst curled up  on the sofa in a ball of very happy regret. Make the pudding after breakfast, is all I'm saying. And double the recipe next time, David. I ate so much of this stuff (he had a serving, too) that now we only have one serving left! ;A; (This is a fabulous way to get rid of leftover rice, by the way. Make a cup of rice, eat a quarter cup of it for lunch, whine that you don't want rice for lunch anymore, the leftover rice'll get nice and hard and  inedible as straight-up rice, and then boom! Pudding!) :} Rice Pudding is NOT a Breakfast Food Ingredients 3/4 cup uncooked rice, which you will cook 1/3 cup raisins 1/4 cup milk (I use soy) 1 tbsp Irish cream 2 cups milk (I use soy) 1/4 ...

Thorough (Chocolate) Bread Pudding

I got a bee in my (Easter) bonnet yesterday to make a new chocolate recipe. Cakes and brownies are nice, but I needed some variety, you know? So I googled for "best chocolate recipe" and lo and behold, the first one I clicked had stuff I could get 'hold of easily and looked DELICIOUS. Fast-forward to Friday night, biking home from work. "I need to stop at the market and buy Hawaiian bread," I tell my long-suffering (but very well-fed) partner, fully expecting "why" to be his response. Instead, I got, "Okay," mostly because Hawaiian bread is delicious and the suggestion to have it in the house is not likely to ever meet with resistance from him. Only Market Basket didn't have  any Hawaiian bread. They had Sweet Bread, which smelled like Hawaiian bread but weighed considerably more. I bought some, along with two hands of bananas, a small thing of heavy whipping cream, and a carton of cherry tomatoes, then - in an act of extraordinary s...

Rolling in the Deep Dish Cinnamon Rolls

These cinnamon rolls are not good for you. In fact, they are actively bad for you. But they're cinnamon rolls, so they're SUPPOSED to be wicked awful for your health. Makes it so that you won't make them terribly often, which you wouldn't anyway because honestly this recipe is pretty long and kind of a pain in the neck (for all that it's not all that difficult). You can easily double the recipe for more cinnamon rolls, and if you do so, just use a 13x9" pan. Yes, this makes a casserole dish-size serving if doubled. Now, if you'll excuse me, I'm going to go DDR off all the cinnamon rolls I'm about to eat. /caloric guilt Rolling in the Deep Dish Cinnamon Rolls Ingredients Total butter needed : 8 tbsp (1 stick) Total sugar needed : 8 1/2 tsp (or 2 tbsp 2 1/2 tsp) Total cinnamon needed : 1 1/4 tsp Total time needed : 2 hours Total yield : 24 cinnamon rolls 1 cup warm water 1 1/8 tsp yeast  2 tsp white sugar 1 1/2 cups flour, added se...

Roasted Layered Veggie Awesome

I honestly don't recall what led me to  this recipe , originally, though I suspect it was either a) Buzzfeed or b) "I want chickpeas and sweet potatoes, let's see what recipes the internet has to offer me in that arena." Either way, I made this dish for the first time on a night I was too tired to cook, and it was terribly good to me, taking only about 10 minutes of effort and providing a really, really tasty meal. ... one which just needed a few little edits to make it purely awesome. Layered awesome. Layered roasted awesome. Made of veggies. (I'm tired and uncreative tonight, lemme alone.) PS If I have to scroll past like 50 photos and a bunch of rambling to get to your recipe, you're probably doing it wrong. I'm here for the food, not for your blogging. Ugh. Anyway. Roasted Layered Veggie Awesome Ingredients 2 large sweet potatoes, peeled, halved lengthwise, and cut into 1/2" chunks 1 tbsp olive oil 1/4 tsp red chili flakes 15 oz...

Garlic Pizza Crust Times Three

This winter - 2015 - has been an absolute pile of bullshit. We've gotten nearly 10' of snow (that's 3 meters for those of you not in the U.S.), today it happens to be 36*F and raining, and tonight it'll be 5*F and stupid. Guess what that means: ice for tomorrow's walk to and from the bus. BULLSHIT I TELL YOU. Currently, my long-suffering partner is outside hammering ice off our now-leaking porch roof. It's his turn to do this nonsense - I spent my day yesterday roof-raking 3' of snow off the top roof, then shoveling it off the kitchen roof, and attacking ice-dams with roof-melt packed into the legs of ladies' stockings. These are all things I'd never've guessed were things one could do until this year. BULLSHIT I TELL YOU. To make my partner's life suck a little bit less, I made him some delicious  green lentil soup  for lunch, and for dinner, I'm making pizza. I'm even going to fry up some chicken sausage for his half of the pizz...

Green Lentil Soup is Totally a Breakfast Food

... and if it's not, then it should be. Ganked shamelessly from  this site , but majorly improved upon because that is how I roll, friends. Give it a go! Green Lentil Soup is Totally a Breakfast Food Ingredients 3 tbsp butter or vegan butter substitute, if  that's how you  roll 1 yellow onion, diced 3 cloves' garlic, minced 3-5 shakes red pepper flakes (this will make it spicy - use 1-2 if you have a sensitive palette) 1 tbsp curry powder 8 cups vegetable stock (I used water + 2 1/2 Tbsp bouillon) 2  cups green lentils, rinsed 1/2 cup coconut milk Instructions - In a large soup-pot, melt butter over medium-high heat. - Add diced onion, minced garlic, and red pepper flakes. - Cook 3-7 minutes, or until the onion has gone translucent. - Add curry powder and stir until it's evenly coated the onion. - Add stock and stir, just 'cause you can. - Rinse your lentils and add them in, too. - Bring to a boil, then reduce heat to medium-low. You...
